Ingredients
Makes 6 servings- 1 kg turkey mince
- 2 x 400 g tins kidney beans — drained and rinsed
- 2 x 400 g tins crushed tomatoes
- 2, diced capsicum
- 2, diced brown onion
- 4 cloves, minced garlic
- 2 tbsp chilli powder
- 2 tsp ground cumin
- 2 tbsp olive oil
Method
Heat the oil in a large pot and cook the onion until translucent, about 6 minutes. Add the garlic and cook a further minute.
Add the turkey mince and break it up as it browns — turkey releases less fat than beef, so don't skip the oil in step one, it'll stick otherwise.
Stir in the chilli powder and cumin once the mince is browned, then add the capsicum, tomatoes, and kidney beans.
Simmer uncovered for 25–30 minutes, stirring occasionally, until it thickens rather than pools liquid on top.
Cool completely, then portion half for the fridge and freeze the rest flat in zip-lock bags — flat bags stack and thaw faster than a block in a tub.
